Ginisang Monggo is a popular dish in the Philippines. Its easy and a healthy Filipino dish.
The main ingredient is the mung beans (monggo) and to make this dish more savoury different flavor are added. Some uses dried shrimp (hibe), pork, tinapa, chicharon(pork crackling) to compliment this dish. And to make it more healthy you can add dahon ng ampalaya or spinach.
This dish is traditionally served on Fridays of Lent, when majority of Roman Catholic Filipinos traditionally abstain from meat.
Ginisang Monggo Recipe
Ingredients:
¼ kilo dried monggo (mung beans) washed and drained
Water for boiling of mung beans
5 cloves of garlic, minced
1 medium sized onion, chopped
2 medium size tomato, chopped
Chicharon (pork cracklings)
1 bunch fresh amplaya leaves (dahoon ng ampalaya)
Dried shrimp (hibe)
Cooking oil
Salt or patis
Ground black pepper
Procedure
1. In a pot combine mung beans and water, bring to a boil over medium heat. Lower the heat and cook until beans skin burst and it softens.
2. In another pan saute onion and garlic until limp and aromatic. Then add dried shrimp (hibe) and stir for 1 to 2 minutes.
3. Add tomato and cook until soft and juice comes out.
4. Add the boiled mung beans including the water where it was boiled.
5. Simmer for 5 minutes. Season with ground black pepper, salt or patis (fish sauce).
6. Add dahoon ng ampalaya. Simmer for 1 minutes. Add the pork crackling and simmer again another 1 minute.
