How to cook Pocherong Baka (Beef Pochero) Bisaya Version


This pochero recipe from the Visayas doesn't have tomatoes but it's a delicious soup that's loaded. It's super flavorful cross between a nilaga and bulalo.

Ingredients:

1 kilo beef shank, use shank with bone marrow
2 tablespoons oil
1 medium red onion, quartered
1 cup leek slices
10 cloves garlic, smashed
4 stalks lemongrass (tanglad) smashed
1 (1-inch) piece ginger peeled
2 ears fresh sweet corn, sliced into 2 cobs
1 cup fresh bamboo shoots
1 beef bouillon
1 jumbo potato, peeled and sliced in half
2 bunches pechay leaves
1 small cabbage, quartered
salt, to taste
pepper, to taste
soy sauce to serve
