Tortang Talong Recipe (Filipino Eggplant Omelet)


Tortang talong or eggplant omelet is a simple Filipino comfort food. It is eaten with rice. Some use soy sauce or ketchup, but for me, I use lemon...it's flavorful.

Ingredients:
3 large Chinese eggplants
5 eggs, beaten
Vegetable oil
1/2 teaspoon salt
Pepper to taste

Instructions:
1. Boil water in a large pot.
2. Submerged the eggplants on the boiling water. Cover.
3. Turn them over when the skin is already discolored. Cover.
4. When the skin is charred or wrinkly, remove the pot from heat.
5. Drain and let them cool down before peeling off the skin.
6. Crack five eggs on a wide bowl.
7. Sprinkle salt and pepper then beat.
8. Peel the skin of the eggplants.
9. Dip the eggplants into the mixture and flatten them with a fork.
10. Fry on medium heat using vegetable oil.
11. Fry for about 3 minutes then pour few spoonful of beaten eggs over the top of each eggplants.
12. Turn over if the bottom is already brown. Repeat with the rest of the eggplants.
